Sapa Sui (Samoan Chop Sui)

  • 4 packages Bean Thread (Saifun 5-6 oz. size)
  • 3 Tbs Salt
  • 6 quarts (24 Cups) water
  • 1/4 Cup vegetable oil
  • 1 onion (baseball size) diced
  • 2 cups Frozen Mixed Vegetable
  • 1 - 1 1/2 Cup Soy Sauce (Aloha) to taste
  • 1 1lb. can Corned Beef (NZ not Brazil)

Bring 24 CUPS WATER to a boil in a very large pot . Add SALT and BEAN THREAD to boiling water and cook for 3 min. Turn off heat, cover, and set aside. Next, in a seperate pan, sautee ONIONS in heated 1/4 CUP OIL. Add CORNED BEEF to onions and cook thoroughly. Cook FROZEN VEGETABLES (stove top or microwave.) When the corned beef and vegetables are cooked the bean thread should look fat from soaking up the water. Drain excess water from bean thread. Use scissors to cut bean thread into shorter pieces. Add corned beef and mix well. Add Vegetables. Add soy sauce to taste.


*If you use Kikoman Soy Sauce reduce the amount of soy sauce because Kikoman flavor is much stronger than Aloha.
*You can use Brazil corned beef but it won't taste as good. In fact you can use any meat you want. It's really yummy with mamoe (lamb)
*Depending where you are located geographically, you may need to let your bean thread soak longer if you live in a more arid climate.
*Bean thread is not rice thread. They are similare but we suggest Bean thread.

**If this makes too much you can reduce the recipe using the following:

  • 1oz. bean thread to 1 cup water
  • 1tsp salt to 1 quart water
  • Soy sauce to taste
